Shimonoseki is Japan's number one exporter of fuku (blowfish). It's so famous in fact that "Shimonoseki" is what most people think of when they hear the word fuku.
The town is filled with restaurants that serve delicious blowfish. If you're nervous about eating fuku, don't worry- any chefs that prepare fuku are required to obtain a special license, so you can relax and enjoy this delicious, safely prepared dish. There are several varieties of fuku cooking- you can enjoy it in sushi, nabe (pot) cooking, hire sake (a special sake with a dried fuku fillet inside). If you had to choose only meal though, we would absolutely reccomend you try fuku sushi. These chefs have spent years honing their skills, and their large plates of sushi are almost like pieces of art. The sushi has a variety of toppings, from peony and chrysanthemum flowers to crane and peacock. The sushi has a chewy texture and light umami flavour that spreads throughout your mouth when you bite in. For flavouring, some chefs add onions, chopped maple leaves and ponzu sauce (made from bitter orange and vinegar). You may be curious about why blowfish is referred to as "fuku", rather than the traditional Japanese word "fugu." There's actually a deeper meaning behind the local name- in Shimonoseki, fuku is thought of as a fish that brings happiness, and so the fish became known as "fuku" (or "happiness") in Shimonseki.
