Kokera Sushi is a local food in Toyo-cho, Aki-gun, eastern Kochi Prefecture. "Kokera" means wood chips, scraps, chips from scraping timber, and Kokera Sushi was named after the making process, as though piling up the leaves. The sushi rice is made with plenty Yuzu vinegar and grilled mackerel, and shiitake mushrooms, carrots, fried egg on top of the sushi rice. Put the layer on top of another layer then a stone weight to make the taste through. People consider that making layers with sushi rice and ingredients as the repetition of happiness, and Kokera sushi has been an essential food to celebrations, festivities and rituals.
