The Yamato pork used by Katsugen is a domestic brand picked from farms located within the country. Winner of the Ministry of Agriculture, Forestry and Fisheries award in 2003. Winner of the Emperor's trophy during the 51th Agriculture, Forestry and Fisheries Festival in 2012.
Judged by the International Taste & Quality Institute iTQi in 2016 (taste score: 91.4 / total score: 90.9), and winner of the 3 Star award for two years in a row since 2015.
The rice makes use of a variety of Koshihikari from JR Rihoku Shirasu. For the crunchy cabbage, we pick and make use of the tastiest product of the season. The breadcrumbs used are made with white bread cooked with wheat of the highest quality, giving them a crunchy yet fluffy texture. The sauce has stayed intact since the founding of the establishment: apples, onions, and a variety of vegetables cooked together to give it a profound flavor. The oil used is a cholesterol free, pure vegetable oil.
